Pomegranate vodka jelly dessert

  • 1 cup pomegranate juice

  • 1/4 cup vodka (can be replaced with pomegranate juice for a non-alcoholic version)

  • 2 packages gelatine

  • 1/2 cup cold water, divided

  • 1/4 cup sugar

  • 1 cup pomegranate seeds (arils)


In large bowl, mix pomegranate juice with vodka. In medium bowl, mix gelatine with 1/4 cup cold water to soften. In small pot, bring remaining 1/4 cup water to boil, add sugar and stir to dissolve. Immediately pour over softened gelatine and stir to dissolve fully. Pour into pomegranate juice and vodka and stir to combine. Pour into shallow dish, cover and place in refrigerator to chill overnight. To serve, chop jelly and top with pomegranate seeds, divide among martini glasses.
