Tomato tart with goat cheese mousse
4 medium tomatoes
1 package pre-made pastry
Goat cheese mousse
1 cup whipping cream
1 small log (5-ounces) soft goat cheese
1/2 teaspoon sugar
1/2 teaspoon salt
Basil leaves, to garnish
Coarse salt and freshly ground pepper, to taste
Preheat oven to 375 ̊F. Lay one round of pie dough in 9-inch tart pan with removable bottom. Prick all over with fork. Bake to package directions. Allow to cool completely before filling.
For goat cheese mousse, in large bowl, combine whipping cream, goat cheese, sugar and salt, whisking until smooth. Refrigerate until ready to use.
To assemble tart, remove pie shell from pan, fill with goat cheese mousse. Top with tomato slices. Garnish with torn basil leaves and salt and pepper.
